Catfish Broiled With Tomato, Onion and Cheese HashSource: The Catfish Institute 4 (4- to 6-ounce) U.S. Farm-Raised Catfish fillets, 1/2 inch thick

2 teaspoons olive oil
1 teaspoon hot sauce
2 medium tomatoes, chopped
1 medium onion, finely chopped
1 teaspoon minced fresh jalapeno pepper, seeds discarded
1/2 cup (1.5 ounces) coarsely grated 2% sharp Cheddar cheese
1/2 teaspoon salt
